Vanille Patisserie, co-founded by award-winning Pastry Chef Dimitri Fayard and Keli Fayard in 2002 continues its leadership in bringing authentic French Pastry Arts to Chicago and beyond. When Chef Dimitri decided to pass the torch for Vanille to new ownership in 2011—to delve more deeply into his passion for teaching at The French Pastry School in Chicago—his best students leaped at the chance to lead the charge to preserve the art of French pastry at Vanille Patisserie.
With owner Sophie Evanoff and Executive Chef Leslie Shaw now at the helm, the Vanille tradition for bringing uncompromised quality and excellence in French pastry arts lives on through the passion of its team of classically-trained French pastry chefs, most schooled hands-on by World Pastry Champion Chef Dimitri himself.
