What's your favorite Vanille pastry?

It's hard to pick a favorite, and I've cycled thru several over the past two years, but I always come back to Amber. I've always liked anything caramel, and with the Amber, I love the combination of flavors and how the bitterness of the different caramel elements blends with the sweetness of the crisp and the lemon Madeleine.

What’s your favorite macaron?

Of course I love caramel. In this case I love the bits of salt that we use in our filling. There are seasonal flavors that give caramel a run for its money—PB&J and eggnog being the top two.

What is your favorite occasion to bring Vanille pastries?

Any occasion really. A box of twelve macarons has become my go-to-gift. Whether it's a birthday or housewarming party, dinner at a friend's house or you just need to say "I'm sorry", any number of our colorful macarons in a box is the perfect gift. My friends have all learned to recognize the Vanille brown box and are very excited to see it.

What is your favorite pastry to make and why?

You might notice a theme here, but I can't really pick a favorite. I like to make what I love to eat, so that puts macarons and pâté de fruit on the list. Now that I've been able to get more involved in menu development I have to put entremets on the list. I really like the challenge of not only finding flavors that work well together, but finding the textures that work with the flavors to make the perfect bite.

What was your biggest mishap in the kitchen?

I don't remember a specific occasion, but the days that come to mind are the ones with little mishaps that add up. When you mis-scale an ingredient on one recipe and then in the middle of the next recipe, you realize that your coworker just used the last of the purée you need. Then later, you forget to set the oven timer, once or twice, and just when you think it can't get any worse, you forget your cream on the mixer and make butter instead of whipped cream. It's days like this that you just have to laugh at yourself and you hope that you don't have to pick up a knife until the next day

What's your favorite Vanille pastry?

My favorite Vanille pastry changes with the season. Whenever there is something new, it instantly becomes my new favorite. But if I had to choose only one, it would be Sacher. One Christmas, when I was very young, my family received a box of very traditional petit fours from a relative. Having always had a love of anything sweet, I devoured them. Years later, when I ate sacher for the first time, I flashed back to that Christmas and those petit fours. Ever since then, it has been my favorite.

What is your favorite occasion to bring Vanille pastries?

Every day! I love to bring home new items to my boyfriend and family. They get very excited and want to know everything there is to know about the different components and how we came up with them. It gives me a sense of pride and I greatly appreciate their interest in what I do for a living.

What was your biggest mishap in the kitchen?

The biggest mishap in the kitchen happened while prepping for my first Valentine’s Day at Vanille, back in 2010. It was just intern and I in the kitchen and we were giving the task of spraying several sheet trays of entremets with bright red cocoa butter. For those of you who don’t know much about spraying cocoa butter, it can be a messy task and cocoa butter is not easily cleaned up. Because it was the end of the day and our shift was just about over, we quickly covered the table with plastic wrap, and set up our large spray box. I then left the intern to spray all the entremets while I wrapped up another project. 

Next thing I know, the entire corner of the kitchen where the entremets were being sprayed was completely red. The wall, the floor, the table and all the equipment underneath of the table were completely covered in red cocoa butter. After getting over the shock and the fits of laughter, we buckled down and spent the next hour scrubbing away any evidence of our spraying disaster.

What's your favorite Vanille pastry?

Elodie, it is sour cream mousse, brown sugar cake, cinnamon apple compote, cider gelée. Nothing takes you back to the feeling of home like apple pie and this dessert takes me back but in a way that also reminds me of how good Vanille is and how far I’ve come from home! The mousse just melts in your mouth with the hint of cinnamon from the apples and chewiness of the cake—It is pure heaven!

What’s your favorite macaron?

My favorite is Red Velvet. To begin with, I love cream cheese filling, but ours has a homemade raspberry jam in addition to the cream cheese filling. There is something about the tart and sweetness from the jam and the added crunch from the raspberry seeds that just makes it explode with flavors and textures with every bite

What is your favorite pastry to make and why?

Anything chocolate. I spent 2 ½ years in chocolate manufacturing and there is nothing like getting your hands covered in chocolate, all for a good reason! There is something very therapeutic about dipping truffles by hand— the softness of the cocoa butter and the warmth of the chocolate.

Frasier—I really like the flavor combination, the beauty of the presentation and that it comes with a tiny macaron.

What is your favorite occasion to bring Vanille pastries?

I don’t need an occasion at all. It’s most fun to surprise family and friends with treats when they least expect it.

Bread pudding – it’s comfort food, and can be savory or sweet. You can make variations that will work for any occasion
